COUPLE OF RECIPES FROM SARA

These are from her friend, Sarah Wittmuss.
1.  ITALIAN BEEF.  Makes great sandwiches.  You make a roast, all day on low, in the slow cooker.  When you put in the roast, add 1 cup of water and a bottle of pepperocinis, with the brine.  Done when you get home.  She loves it.

2.  PASTA BAKE (7 points per cup)  Ingredients:  1 no yokes pasta bag (12 oz.), cook it;  1 cut up pepper (Sarah used 2, one red and one yellow);  2 red onions cut up (Sarah used a half an onion); and she added some cut up mushrooms.  Cook all veggies 5 minutes until soft in skillet.  Add 1-1/2 lbs. hamburger and cook until done.  Add 2 cans of petite cut tomatoes (she used garlic/basil ones) and the cooked pasta.  Mix in 3/4 cup of low fat cheddar cheese.  Put in big casserole pan.  Crumble 1 sleeve (around 30 crackers) of low fat Ritz crackers over it.  Spray with cooking spray and add 1/2 cup more cheese over it.  Bake for 40 minutes at 350 degrees.

The pasta bake sounds really good--we are BIG pasta eaters here!! I will have to try them both!

Well our good weather just took a turn for the worst--I spoke too soon! We had 3 days of 55+ and now back to windy, rainy 40's!! They said the weekend is going to be nice, we'll see!!

The italian beef is REALLY good! Made GREAT sandwiches that our whole family ate! YEA! A dinnertime success.
They're already declared a 2-hour late start tomorrow. They say the wind is supposed to really pick up & its supposed to snow. We'll see. It's not doing anything now...so I think its weird that they've already postponed school a bit. But...we'll take it!!

For some reason, it wouldn't let me post. Wasn't giving me the option of the nickname. Has something changed with the blog?

I was at the doctor tonight with Gray for 3 hours. He had a 105 fever this afternoon and a terrible headache (was crying, very sensitive to light & sound -- it was awful!). We tested for strep, influenza & did physical meningitis tests (but not a spinal tap). All were negative. But his white blood counts were high. We're giving him lots of ibuprofin & tylenol tonight and will see our pediatrian tomorrow at 2. If his headache gets much worse tonight, we're to go to the ER and our ped. will meet us there. Gray did great...had to get poked & prodded a lot, including taking blood from each arm...which made him puke!

We just got home & I enjoyed 2 pieces of luke warm, but delicious pizza. So much for Valentines Day! Maggie reminded me that Gray tends to get sick on holidays (Asthma attack that sent us to ER one Mothers Day, hit in the head with a baseball bat on 4th of July, broken arm on his Christmas concert...and now this.) Maggie's party will have to be postponed for tomorrow night...which is a bummer.

What the heck is pepperocinis? I've never heard of that! I think I'll try the recipe as soon as I figure out what it's talking about.

That's crazy about Gray. Hopefully he'll be better in the morning. Our kids are all healthy now. Ezra still has the splint on his arm (broken wrist) but he gets around great. I think he has to wear it about 3 weeks so that's not bad.

We had a nice Valentine's day. We had a single friend come over for dinner and had a great time. Ben and I have a babysitter for tomorrow night. I'm not sure what we'll do. He leaves on Sunday morning for a show in Indiana. His sister-in-law is promoting it so I think he'll just be staying at their house. Ben's brother will graduate from Purdue in May and is looking for jobs now. I think he wants to do basically what Doug does. We need to take a trip up there to see them and Grandma Freeland before they leave.

Tomorrow morning our little preschool is taking a tour of a grocery store and then learning about the letter O. Should be fun. Ok, I need to go to bed. I hope everyone has a great weekend!

Pepperocinis are little yellow peppers and come in a jar. One comment I found was remove the stems before serving. Here is a recipe I found while looking for a definition: A great crock pot recipe for busy people is: 3-4 lbs. beef roast (any cut), 1 med. sliced onion, jar of pepperocinis, 1 pkg of Good Seasons Italian Dressing, 1 can of beer. Put the beef in a crock pot, add onion and pepperocinis with juice. Sprinkle packet of italian dressing over the top and add the beer. Cook all day until the meat is tender. Remove roast and shred with a fork. Return to the crock pot. Serve on a good crusty roll with mayonaise. Note: She usually picks out the stems of the pepperocinis before serving. What is with the Rogers grandchildren breaking bones? How did Ezra break his wrist?

Sara, how is Gray this morning? Hope he is better.

I'm glad that somebody else didn't know what a pepperocinis was. I thought I was the only one that didn't know. I found them in the aisle where the canned peppers are. Are they hot and spicy?

I looked at Andrew Peterson's tour schedule and found that they will be in Pennsylvania in September. It is about 2 hours from my house. I think I will plan on going. Nothing like planning in advance!!

Hope Gray is feeling better today. We were so lucky - it was very rare that CJ was ever sick.

We had freezing rain and snow earlier this week but it is supposed to be nice tomorrow. Carl and I are visiting with mom. I told her to make a list of things she needs done!!


I just noticed that "nick-name" is gone under Identity - that might be why Sara couldn't post??

I was hoping for a discussion of pepperocinis. I keep wondering about Gray...hope is feeling much better by now.
We have sunshine here...and although temps are still low, it gives one a false sense of temperate weather!

The peppers are hot. I cooked them, stem & all, with the meat all day. It made the meat really flavorful. I did take the stem off of 2 and put them on my sandwich...and it was good. It just added a little pizazze...because I'm not a big spicy food person.

Roberta: how did you get your name to post. I was just able to post as anonymous. HMMMMM!

Barb: Have fun with Grandma! Give her an extra hug from all the Petersons!

I know...I can't believe Ezra broke his wrist. CRAZY! When we last saw the orthopedic surgeon (who Gray loved) he said, I have a feeling I'll see you again, Gray. I have a feeling he's right! We just got the bill...bummer! :)

We watched Hairspray last night. It was fun. The kids loved the music & dancing. I didn't know the story. I can see how it would be a great broadway musical.
