BEEF SHORT RIBS W/GINGER-MANGO BBQ SAUCE

Slow Cooker Recipe. 5-1/4 to 6-1/4 hours on high; 7-3/4 to 8-3/4 hours on high. I used Country Style Ribs. Yummy!
Makes 6 servings.

Ingredients: 2 lbs. well-trimmed boneless beef short ribs, cut 2 x 2 x 4-inch pieces. (I put in the ribs whole with bones)
1-1/2 cups diced fresh or drained canned mango
1 medium onion, chopped
1 tablespoons minced fresh ginger
1 cup of hickory-flavored BBQ sauce

Instructions: 1. Place beef short ribs, mango, onion and ginger in slow cooker. Add BBQ sauce. Cover and cook. (No stirring is required during cooking.) 2. Remove ribs, season with salt and pepper, as desired. (The country ribs I cooked were falling off the bones and tender and yummy. We did not salt and pepper. They are a little sweet. Serve with the sauce. The recipe said to skim the fat from the cooking liquid, but we did not have any. The sauce was thick with the mangos and onions.)

If you can not find mangos, peaches will work (use a 15 oz. can of peach slices. Coarsely chop the peaches.

Does he search by ginger root?! It's so cool that he's experimenting with all these meals. What a treat for you, Mom. How many years until Doug is cooking for me?! HA!

We had a fun night at a birthday party for Anna Hackemer (she's 10 today!) We had grilled hamburgers & all the trimmings! Her poor dad FROZE outside while grilling (it's 9 degrees here!) But they were sure good!

The kids are all asleep...tomorrow we're back to our old routine. Gray has been waking up after 9 each day of break...he's in for a shock tomorrow morning. He has a big day though...his cast is coming off! He's handled his purple cast so well...with very few complaints.

We needed new furniture in our living room, because the fabric was deteriorating on the old stuff. But we hated to spend lots of money. I found some slip covers on clearance at Walmart tonight...and it looks pretty good! We're happy with this new look for $60 (total for both!)

So glad Beth & Ben made it home. I talked to Beth briefly, but they were in heavy traffic & she needed to help Ben.

Tonight's the night. If Doug doesn't come up with a clever Christmas letter...well, I'm not sure what I'll do. My cards are all addressed with pictures stuffed. Maybe I'll just send the pictures...but I love receiving the updates from other people. I guess you'll all find out when our cards arrive...

Doug is so busy preparing to leave for San Francisco. The 12 students he's taking on the Amtrak are very excited to get out of South Dakota! Doug has never been on the train and has never been to SF. He's excited too!

I did not search by "ginger," but that is a good idea. The recipe I saw just happened to call for ginger. I read somewhere that ginger is really good for you. Today is the day that Gray gets his cast off. By now, it is probably already off. He sure adapted well to his purple cast, healing his broken wrist.

Cast is off. It's healing, but we need to be really careful for 3 more weeks. That could be tough. The surgeon (who we really liked) said I have a feeling I may see more of you as you grow up. He is an active boy...100%! :)

Tonight for dinner: spaghetti & meatballs. That's a favorite at this house.

this is wonderful Brian! I copied your recipe and hope to make it soon. I took some cooking classes some time ago, and learned how to use ginger. I have a recipe for honey gingered pork tenderloins that is wonderful. keep the photos coming. I will check back periodically to see what is new with your family!
