USD LOSES NATIONAL CHAMPIONSHIP 63-58


I was over visiting my mother at the hospital and got to watch the game.  USD had a 49-40 lead with 5 minutes and lost.  Bummer.  
Grandma Lucy is about the same.  She had a 101.5 temperature so they gave here something for that and something for her stomach.  She did not eat tonight or all day for that matter.  She looks at food and gets sick.  Not good.

WW TACO SOUP FROM MARGE

Marge says this soup is really good, though a little "beanie," if you know what she means.  Might want to take some Beano tablets before eating this, she says.
  
1 large chopped onion, 1 pkg of taco seasoning, 2 cups whole kernel corn, 1 can of fat-free chicken broth, 1 can of Black Beans (undrained), 1 can of Great Northern Beans (undrained), 1 can of fat-free refried beans, 1 can diced tomatoes, 1 can of Rotel tomatoes (hot, medium or mild).  

Saute the onion until soft in large pot.  Add the other ingredients and simmer for 30-40 minutes.

Makes 15 cups.  1 cup = 1 WW point

Enjoy.

HAYDEN STAUSBURGER GROWING UP


Wow.  This little guy is growing up into a big boy.  Can not see much of Chris, but he is obviously a proud daddy.

BEN'S BIG FISH RELEASED!



Roger and Benjamin just got back from a fishing trip to Texas with Roger's parents and Ben caught some BIG fish and had to release them.  To keep a fish it had to be within a window for size, neither too big nor too small.  

EASTER WEEKEND PHOTOS



I got a nice picture of Esther and Grandma Lucy.  The Petersons got here Friday afternoon late and and Protzmans came over for the start of a great, Easter weekend at the Rogers home.  Benjamin and Roger got home from their fishing trip to Texas with Roger's partents.  Ben caught the biggest fish, but had to return it.  It was a 10 lbs. bass.  Wow!  Roger has a nice picture I will see if I can get posted later.  

EASTER CAKE


The Petersons brought a beautiful bunny cake for our Easter, as held by Abby, Maggie and Grace.  It was a yummy, chocolate cake.

MAGGIE'S RECITAL DAY



Saturday we drove up to Vermillion for Maggie's piano recital and got a few pictures, enjoying her play and the drive.  On the way up, near Vermillion, along the river in a corn field were hundreds, maybe a thousand, White Canadian Geese.  On the way home 3 hours later, they were gone on their way north.

RESURRECTION LETTERS CONCERT



The concert was great.  It was so good to see Ben, Andrew, Andy and Jill and to be treated to a wonderful musical experience.  Rose Ann and I rode down with Tricia, Abby, Grace and Matthew and Sara drove down from Vermillion with Maggie and Gray.  Elkhorn is a 1 hour and 45 minute drive from Norfolk so it was a little after midnight when we got home.  Sara came to Norfolk for the night and left for home at a little after 7 this morning.  We got to see the inside of the tour bus which was wonderful.  Ben brought along 3 boxes of clothes for David.  We pass clothes around.  Now Tricia needs to send some maternity clothes to Beth.  Yes, they are expecting baby Shive #4.  I got a couple of pictures at the concert.  One of Sara and Jill and one of Ben holding David with a bit of Gray rushing by.  It was a fun evening.  I am sure you guys who make the Indiana concert will love it, too.

NEBRASKA DUCKS


The lake near us, Skyview Lake, is a great stopping place for ducks and geese migrating.  I was on a walk around the lake (about 2 miles) and snapped this picture.  The lake leaks and has to be fed by pumping water in and that, evidently, keeps one end from freezing.  When I took this picture it was only about 33 degrees and there was a pretty stiff wind that got to me when I walked across the dam in the background of this picture.  It is supposed to get up to 60 tomorrow.  Wow!  That will be nice.

BANANA COOKIES

I found this recipe on Simply Recipes (www.simplyrecipes.com) and tried it out yesterday afternoon.  We had a couple of ripe bananas to use.  The cookies are yummy.  This is supposed to be someone's grandma's all-time favorite cookie recipe.  
1/2 cup of butter, room temperature
1 cup of sugar
1 egg, room temperature
1 cup of mashed bananas (about 2 large bananas)
1 tsp of baking soda
2 cups of flour
pinch of salt
1/2 tsp of ground cinnamon
1/2 tsp of ground mace or nutmeg
1/2 tsp of ground cloves
1 cup of pecans (walnuts and chocolate chips are fine alternatives)
PREHEAT oven to 350.  Cream the butter and sugar until light and fluffy.  Add the egg and continue to beat until the mixture is light and fluffy.
MIX the mashed bananas and baking soda in a bowl and let set for 2 minutes.  The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
MIX the banana mixture into the butter mixture.  Mix together the flour, salt and spices and sift into the butter and banana  mixture until just combined.
FOLD into the batter the pecans.  Drop in dollops onto parchment paper-lined baking sheets.  Bake for 11-13 minutes or until nicely golden brown.  Let cool on wire racks.  
MAKES about 30 cookies.  
These are very good, soft cookies.  Now you have something to do with your ripe bananas other than banana bread.  Enjoy.

NAP TIME.



I thought this was a cute picture.  Rose Ann kept waking up when I tried to take her picture, but I just kept trying and got it taken.  Roger got in some nap time, too.  

SATURDAY IN NORFOLK




Sara, Maggie, Gray and Gertie came down to Norfolk Friday afternoon and left Saturday afternoon late and we had a good visit with the Protzmans.  David is growing and responding a lot with smiles and "talking."  Sara and Tricia got in some shopping and the kids got in a lot of playtime.  I thought I would send a couple of pictures from the weekend.
