BANANA COOKIES

I found this recipe on Simply Recipes (www.simplyrecipes.com) and tried it out yesterday afternoon.  We had a couple of ripe bananas to use.  The cookies are yummy.  This is supposed to be someone's grandma's all-time favorite cookie recipe.  
1/2 cup of butter, room temperature
1 cup of sugar
1 egg, room temperature
1 cup of mashed bananas (about 2 large bananas)
1 tsp of baking soda
2 cups of flour
pinch of salt
1/2 tsp of ground cinnamon
1/2 tsp of ground mace or nutmeg
1/2 tsp of ground cloves
1 cup of pecans (walnuts and chocolate chips are fine alternatives)
PREHEAT oven to 350.  Cream the butter and sugar until light and fluffy.  Add the egg and continue to beat until the mixture is light and fluffy.
MIX the mashed bananas and baking soda in a bowl and let set for 2 minutes.  The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
MIX the banana mixture into the butter mixture.  Mix together the flour, salt and spices and sift into the butter and banana  mixture until just combined.
FOLD into the batter the pecans.  Drop in dollops onto parchment paper-lined baking sheets.  Bake for 11-13 minutes or until nicely golden brown.  Let cool on wire racks.  
MAKES about 30 cookies.  
These are very good, soft cookies.  Now you have something to do with your ripe bananas other than banana bread.  Enjoy.

These sound good. And they don't seem too bad for you. We'll definitely try them.

We've had a fun weekend. We had 2 families over Friday night for an vegetarian Italian feast. (There was NOTHING Weight Watchers-like on the table!) ONe of the women is a vegetarian. I had no idea what to make...my whole meal repertoir is based on MEAT! ANyway...it was delicious!

Last night, we got a babysitter and went to see a local band play at the EAgles Club. It was really fun! Lots of our friends were out.

Doug left EARLY this morning for Omaha. He has to work down there, and was going to catch Greg Mortinson speaking at a church down there. I can't remember if I wrote about Three CUps of Tea...its an amazing book about the work Greg has done building schools in Pakistan (he believes the way to peace is through education). Doug is very excited to hear him speak...and is in fact trying to bring him to USD to speak.

Tonight, a friend & her family are coming over for dinner because both of our husbands are in Omaha. THey'll be here any minute.

By the way, the recipe said about 2-1/2 bananas, but I used only 2 ripe bananas and it worked fine.

Sara and all, I checked the USD website and the USD women's basketball team won the NCC tournament (the last NCC tournament as the league is ending after this season). They beat 7-time champs North Dakota 73-69 and the USD women are now 28-1 and now go to the NCAA Division II tournament. Go Yotes!

they are just on fire! I have such guilt associated with them though. We used to buy season tickets & didn't miss a game. Now...in an effort to simplify our lives, we've let that go. We're missing out on so much fun...but...I just couldn't imagine rounding the kids up to go to a tournament game today. I wouldn't watch the game anyway...I would have just been chasing kids! Our time to attend events will come again. We just may not get to watch winning teams. But, it will still be fun!

I checked and the USD score was actually 72-69. I saw on the news that this was their 1st NCC (North Central Conference) championship. GREAT!

Sara - it sounds like you have been busy the last few days!!!

How about those Lady Boilermakers - they won the Big Ten Tournament yesterday!

Marilyn and Jack have been busy going to high school basketball games the last few weeks - Central Catholic is still in the tournament. They play again this week-end - Marilyn was hoping it would be at Lafayette Jeff so they wouldn't have to travel too far.
