NORTH PLATTE, NE
Rose Ann and I made a two-day trip over to North Platte. I got a nice picture of the South Fork of the Platte River and thought I would share it with you. We drove over Thursday afternoon and came home Friday night. It is a 4-1/2 hours drive that is pretty boring. On the way over we got into a terrible storm for the last 20 minutes or so and could barely see the road. I got a speeding ticket in North Platte (35 in a 25 zone) and got another nose bleed. I got another one on the drive home and fortunately, Rose Ann was driving. Yikes. No problems today, thank goodness. Oh, I had time to be a tourist, but everything was closed until May 1st and the observation deck at the Bailey Railroad Yards will not be finished and open until this summer. North Platte has the world's largest railroad switching yard, switching over 15,000 cars a day. They tore down the old observation deck and the new one is over 9 stories tall and called "The Golden Spike."

BUTTERNUT SQUASH
From Heloise: "We love to eat butternut squash, and I used to dread cutting it up. Now I microwave a whole squash for about 5 minute, and it makes the squash easier to cut up. My recipe is to place cubes of squash in one layer on a cookie sheet. Drizzle with olive oil and the juice of a lime. Bake for 20 minutes at 350 degrees, and turn the cubes. Bake another 20 minutes, and it's done. From a Heloise Reader via e-mail." Rose Ann cut this out to save.

GRANDMA LUCY IS BACK IN SCOTTSBURG
I flew back to Scottsburg with Mother Tuesday. She is doing much better, getting her appetite back and gaining strength. I helped her check into an assisted living home called The Beehive on Thursday afternoon. It is very nice and she loves it. She says she is staying 2 weeks, but could stay longer, if she wishes. They have no long term contracts and only have 12 rooms. Very close knit home with plenty of help as needed and great food. I would say she is thriving there. I think she is especially enjoying all the special attention she is getting. We are hoping she will stay a little longer. I flew back to Norfolk Friday and am enjoying getting back our home. It was good I was able to help her, but it is good to get back to "normal." I took some pictures there which I will share.
