BAILEY'S CHOCOLATE CHIP CHEESECAKE

This is good stuff.
  
CRUST:  1 cup graham cracker crumbs.  1/4 cup packed brown sugar.  1/4 cup melted butter.  

CHEESECAKE:  4 pkgs (8 oz) cream cheese, softened.  1-1/2 cups sugar.   4 eggs.  3/4 cup Baileys (Carolina brand works and is cheaper).  1-1/2 tsp vanilla.  1 cup semisweet chocolate chips.  

PREHEAT oven to 325.  Use a 10" spring-form pan.  CRUST:  mix crumbs, brown sugar and butter.  Pat in pan.  Bake 5-8 minutes.  CAKE:  In large bowl, beat cream cheese 'til smooth, then gradually add in sugar.  Add eggs one at a time, beating well after each.  Blend in Baileys and vanilla.  Sprinkle 1/2 cup of chips on crust.  Gently pour in cream cheese batter.  Sprinkle remaining chips over batter.  Bake 1 hour.  Turn off oven and let stand in the oven, door slightly ajar for an hour.  Refrigerate 6 hours or overnight.

I eat most of what I bake and I try to watch what I bake so it is not too fatening. These cheese-cake recipes are not low-fat, but the key is not eat a lot. We make them with low fat or lite ingredients whre we can.

Rose Ann and I are really leaning toward that Outer Banks place to rent for a Rogers Family Reunion in the summer of 2009. What kind of a place did you guys rent over there when Whitney graduated? We would need a place with 5 or 6 bedrooms.

For Whitney's graduation, we rented a condo at Atlantic Beach.
The Outer Banks is a different area, but I have a friend that just had an extended family vacation there - they rented a 6 bedroom house - had it's own pool, lots of tv's and a playground area - I'll get the details for you. Sounds like fun!

Thanks. It will be great to see the details on your friend's house rental. I would also be interested in knowing more about the Atlantic Beach area. The house that has been suggested belongs to the mother of some of Ben & Beth's friends. We started thinking about the family vacation for our 45th wedding anniversary; but that is in 2010 and I am retiring that summer; so we decided to go for 2009. We know with the grandchildren getting older it will become more difficult to get everyone together (with teenagers sports and jobs). So we moved it up to 2009. Then we reserved the summer of 2010 for the Freeland extended family.

By the way, we give away much of Brian's cooking and baking and he uses many Weight Watchers recipes. It's good to have something to take along when we visit someone who has been sick; and then there is the Protzman's who can easily polish off any dessert.

We went to the movie "Journey To The Center Of The Earth" with Benjamin on Friday. It was very well done. He had read the book and said the movie previews didn't seem anything like the book; but they did a good job of incorporating the original book in the new movie. The special effects were great. There were a couple times I just about jumped out of my seat!

Sounds like a great recipe! I had a nice with with the Sara, Doug and the kids and Tam last week (I met them at Rich and Tam's - Rich was in Indy). Sara looks great!!!

Can't wait to hear your plans for summer 2009 - sounds like it will a lot of fun!
